YELLOW CORN HASH

Ingredients  
  • Yellow corn
  • Red onion
  • Garlic
  • Red chilli pepper
  • Potato
  • Carrot
  • Cilantro
  • Butter
  • Salt
  • Pepper
  Instructions  
  • Remove the corn from the can and leave to drain
  • If using fresh corn peel the corn and cut off the kernels
  • Peel the onions and garlic and finely chop both
  • Place the butter in a thick-bottomed pan and heat over a medium gas
  • Add to the pan the chopped onions and garlic
  • Cook till beginning to colour
  • Peel and dice the carrot and potatoes
  • Add the diced vegetables to the pan along with the corn kernels
  • Add the sliced chillies and continue to cook
  • Reduce the heat and cover with a lid
  • Cook till the carrots and potato are tender
  • Remove from the heat and add the chopped cilantro
  • Season with the salt and pepper
  • Leave to cool and reserve in the fridge till needed
