YELLOW CORN HASH
Prep/Cooking Time: 30-45 Minutes

- Yellow corn
- Red onion
- Garlic
- Red chilli pepper
- Potato
- Carrot
- Cilantro
- Butter
- Salt
- Pepper
- Remove the corn from the can and leave to drain
- If using fresh corn peel the corn and cut off the kernels
- Peel the onions and garlic and finely chop both
- Place the butter in a thick-bottomed pan and heat over a medium gas
- Add to the pan the chopped onions and garlic
- Cook till beginning to colour
- Peel and dice the carrot and potatoes
- Add the diced vegetables to the pan along with the corn kernels
- Add the sliced chillies and continue to cook
- Reduce the heat and cover with a lid
- Cook till the carrots and potato are tender
- Remove from the heat and add the chopped cilantro
- Season with the salt and pepper
- Leave to cool and reserve in the fridge till needed
