Ingredients

  • 7.5 Kilo Flour whole wheat
  • 2.5 Kilo Flour 2
  • 100g Malto
  • 7 Ltr Water
  • 3.5 Kilo Ferment
  • 200g Salt
  • 200g Olive oil

Instructions

  • Place the flours in the mixing bowl
  • Add to the bowl the malto and water
  • Mix for 8 minutes on low
  • Add to the bowl the ferment and mix for a further 8 minutes
  • Add the salt and olive oil
  • Mix on high for 2 minutes
  • Place in a proving box and leave for 2 hours
  • After 2 hours cut and shape
  • Leave to prove overnight
  • Cook in the morning
