Prep/Cooking Time: Longer Than 120 Minutes

- 7.5 Kilo Flour whole wheat
- 2.5 Kilo Flour 2
- 100g Malto
- 7 Ltr Water
- 3.5 Kilo Ferment
- 200g Salt
- 200g Olive oil
Instructions
- Place the flours in the mixing bowl
- Add to the bowl the malto and water
- Mix for 8 minutes on low
- Add to the bowl the ferment and mix for a further 8 minutes
- Add the salt and olive oil
- Mix on high for 2 minutes
- Place in a proving box and leave for 2 hours
- After 2 hours cut and shape
- Leave to prove overnight
- Cook in the morning
