WHITE WINE SAUCE BASE

Ingredients
- 750g Yellow onions
- 20g Garlic
- 2ltr White wine
- 2ltr Heavy cream
- 8 Sprigs of Thyme
Instructions
- Peel the onions and garlic
- Finely chop the onions and garlic
- Place in a thick bottom pan
- Add to the pan the Thyme and white wine
- Bring to the boil and reduce to 1/3
- Once reduced add the cream
- Bring to the boil and simmer
- Reduce to 1/2
- Remove from the heat and leave to cool
- Reserve ion the fridge till needed
