TOMATO SOUP

Ingredients

  • Ripe Roma tomatoes
  • Red onion
  • Cucumber
  • Avocado
  • Garlic
  • Olive oil
  • Red wine vinegar
  • Salt
  • Black pepper

Instructions

  • Wash the tomatoes and remove the core.
  • Roughly chop the tomatoes (enough to be blended)
  • Peel the onion and finely chop.
  • Peel the garlic and finely chop.
  • Peel the cucumber and roughly chop.

 

  • Place all the vegetables into a blender and add to it the avocado.
  • Add the olive oil and vinegar and blend to a puree.
  • Season to taste, add more vinegar if needed.

 

  • Serve in a bowl with some diced avocado.
  • Drizzle with olive oil.
