TOMATO SOUP

Ingredients
- Ripe Roma tomatoes
- Red onion
- Cucumber
- Avocado
- Garlic
- Olive oil
- Red wine vinegar
- Salt
- Black pepper
Instructions
- Wash the tomatoes and remove the core.
- Roughly chop the tomatoes (enough to be blended)
- Peel the onion and finely chop.
- Peel the garlic and finely chop.
- Peel the cucumber and roughly chop.
- Place all the vegetables into a blender and add to it the avocado.
- Add the olive oil and vinegar and blend to a puree.
- Season to taste, add more vinegar if needed.
- Serve in a bowl with some diced avocado.
- Drizzle with olive oil.
