TOMATO CHUTNEY

Ingredients

  • 250g Red onion
  • 20g Garlic
  • 30g Sugar
  • 50g Red wine vinegar
  • 70g Tomato paste
  • 950g Canned tomatoes
  • 4g Chili flakes
  • Salt
  • Pepper
  • 40g Olive oil

Instructions

  • Peel the onion and garlic and remove any root
  • Place the oil in a thick bottom pan and heat over a medium stove
  • Add to the pan the onion and garlic finely chopped
  • Cook over a medium heat until the onions begin to colour
  • Add to the pan the sugar and stir through
  • Cook for 2 minutes than add the vinegar to the pan
  • Cook for a further 2 minutes then add the tomato puree to the pan
  • Cook for a further 2 minutes then add to the pan the canned tomatoes
  • Add the chili flakes and bring to the simmer
  • Cook over a low heat for 1 hour
  • Once cooked season to taste and remove from the heat to cool
  • Store in a air tight container in the fridge till needed
