TOMATO CHUTNEY
Prep/Cooking Time:
60-90 Minutes
Ingredients
- 250g Red onion
- 20g Garlic
- 30g Sugar
- 50g Red wine vinegar
- 70g Tomato paste
- 950g Canned tomatoes
- 4g Chili flakes
- Salt
- Pepper
- 40g Olive oil
Instructions
- Peel the onion and garlic and remove any root
- Place the oil in a thick bottom pan and heat over a medium stove
- Add to the pan the onion and garlic finely chopped
- Cook over a medium heat until the onions begin to colour
- Add to the pan the sugar and stir through
- Cook for 2 minutes than add the vinegar to the pan
- Cook for a further 2 minutes then add the tomato puree to the pan
- Cook for a further 2 minutes then add to the pan the canned tomatoes
- Add the chili flakes and bring to the simmer
- Cook over a low heat for 1 hour
- Once cooked season to taste and remove from the heat to cool
- Store in a air tight container in the fridge till needed
