TOMATO & BASIL SOUP

Ingredients

  • 2.5 kilo canned chopped tomatoes
  • 250g white onions
  • 20g garlic
  • 40ml olive oil
  • 20g basil leaves and stems
  • 200g potatoes
  • Salt
  • Pepper

Instructions

  • Peel the onion and garlic and remove any stem
  • Roughly chop the onion and garlic and place in a thick bottom pan with the oil
  • Place the pan over a medium heat
  • Cook the onions and garlic until they are beginning to color
  • Add to the pan the canned tomatoes and bring to the simmer
  • Turn down the heat and add the peeled and chopped potatoes
  • Cook for 1 hour over a low heat
  • Once cooked blend with an immersion blender
  • Remove from the heat and season to taste
  • Cool and reserve in the fridge till needed
  • Re heat to serve and top with an olive oil drizzle and croutons
