TOMATO & BASIL SOUP

Ingredients
- 2.5 kilo canned chopped tomatoes
- 250g white onions
- 20g garlic
- 40ml olive oil
- 20g basil leaves and stems
- 200g potatoes
- Salt
- Pepper
Instructions
- Peel the onion and garlic and remove any stem
- Roughly chop the onion and garlic and place in a thick bottom pan with the oil
- Place the pan over a medium heat
- Cook the onions and garlic until they are beginning to color
- Add to the pan the canned tomatoes and bring to the simmer
- Turn down the heat and add the peeled and chopped potatoes
- Cook for 1 hour over a low heat
- Once cooked blend with an immersion blender
- Remove from the heat and season to taste
- Cool and reserve in the fridge till needed
- Re heat to serve and top with an olive oil drizzle and croutons
