THAI MANGO WITH CHILI SYRUP

Prep/Cooking Time: Longer Than 120 Minutes

Ingredients

  • 380g mango
  • 2g chili flakes
  • 40g sugar
  • 40g water
  • 2g vanilla
  • 200g sour cream
  • 12g mint
  • 4g Malden sea salt

Instructions

  • Place the sugar, water, chili flakes and vanilla into a bowl
  • Leave till the sugar is completely disolved 
  • Reserve the syrup in the fridge till needed

To serve

  • Peel the mango and remove the stone
  • Cut into chunky lengths and place in a mixing bowl
  • Add to the bowl the chili syrup
  • Leave to marinate for at least 2 hours
  • Spoon the mango pieces into the serving dish along with a generous amount of syrup
  • Spoon the sour cream on top
  • Finish with a pluche of mint and a pinch of salt crystals
