SWEET CORN FRITTERS WITH TOMATO CHUTNEY

Ingredients
- 260g Canned corn (fresh if possible)
- 60g Red bell pepper
- 40g Green onions
- 10g Coriander
- 2 Eggs
- 80g Cream
- 120g Flour
- 4g Baking powder
- 2g Chili flakes
- Salt
- Pepper
- 160g Tomato chutney
Instructions
- Drain the corn and place in a small mixing bowl
- Add to the bowl the de-seeded and diced red pepper
- Add to the bowl the cleaned and sliced green onions and the cleaned and roughly chopped coriander
- In a second bowl crack the eggs
- Add the cream to the bowl and whisk together
- Add in the flour and baking powder
- Whisk together to form a thick batter
- Add the prepared vegetable ingredients to the batter and mix through well
- Season the mix with the salt and pepper. And add the chili flakes
- Reserve in the fridge till needed
- When ordered remove from the fridge
- Spoon the corn mix into the fryer 1 spoon at a time
- The mix will sink then float to the surface after a couple seconds
- Cook till golden all over
- You may need to turn the during cooking to gain an even colour
- Once cooked remove from the oil and place on paper to drain
- Serve immediately with a ramakin of tomato chutney and some mixed leaves
