SUN BLUSH TOMATOES

Prep/Cooking Time: Longer Than 120 Minutes

Ingredients  
  • Plum tomatoes
  • Garlic
  • Rosemary
  • Thyme
  • Olive oil
  • Salt
  • Pepper
  Instructions  
  • Wash the tomatoes and remove the core
  • Pat the tomatoes dry then cut into quarters
  • Lay the quartered tomatoes on a baking sheet on non stick paper
  • Peel the garlic and finely chop
  • Place the chopped garlic in a small bowl
  • Remove the leaves from the rosemary and thyme
  • Finely chop the herbs and add to the chopped garlic
  • Mix together the garlic and herbs
  • Sprinkle the garlic and herbs over the tomatoes
  • Drizzle the tomatoes with the olive oil
  • Season the tomatoes with the salt and pepper
  • Place the tomatoes in the oven at 140c and cook for 2 hours
  • Once cooked remove from the heat and leave to cool naturally
  • Once cooled layer in a jar and cover with olive oil to preserve
