SUN BLUSH TOMATOES

Ingredients
- Plum tomatoes
- Garlic
- Rosemary
- Thyme
- Olive oil
- Salt
- Pepper
Instructions
- Wash the tomatoes and remove the core
- Pat the tomatoes dry then cut into quarters
- Lay the quartered tomatoes on a baking sheet on non stick paper
- Peel the garlic and finely chop
- Place the chopped garlic in a small bowl
- Remove the leaves from the rosemary and thyme
- Finely chop the herbs and add to the chopped garlic
- Mix together the garlic and herbs
- Sprinkle the garlic and herbs over the tomatoes
- Drizzle the tomatoes with the olive oil
- Season the tomatoes with the salt and pepper
- Place the tomatoes in the oven at 140c and cook for 2 hours
- Once cooked remove from the heat and leave to cool naturally
- Once cooled layer in a jar and cover with olive oil to preserve
