SPINACH & MUSHROOM SALAD

Ingredients

  • 80g fresh spinach
  • 80g button mushrooms
  • 30g shallots
  • 60g cucumber
  • 10g balsamic vinegar
  • 20g olive oil
  • 40g white wine vinegar
  • 20g sugar
  • 40g croutons
  • salt
  • pepper

Instructions

  • Wash the spinach and dry well
  • Wash the mushrooms and pat dry
  • Slice the mushrooms and place in a small bowl
  • Add to the bowl the sugar and white wine vinegar
  • Cover and leave to sit for 30 minutes
  • Peel the shallots and finely slice
  • Peel the cucumber and slice into bite size pieces
  • Place the spinach in a mixing bowl
  • Drain the mushrooms from the liquid and add to the spinach
  • Add the shallots and cucumber to the bowl along with the croutons
  • Drizzle with the olive oil and balsamic
  • Toss through and season to taste
  • Serve immediately
