SPICY & SOUR VEGETABLE SALAD

Ingredients

  • 1 Cucumber
  • 1 Red bell pepper
  • 1 Green bell pepper
  • 1 Chinese long cabbage
  • 1/2 Chinese radish
  • 1/2 Bunch coriander
  • 1/4 Bunch mint
  • Sour dressing (see recipe)
  • Salt
  • Pepper

Instructions

  • Wash all of the vegetables
  • Peel the radish and deseed the pepper
  • With a mandolin cut the radish into fine strips
  • Cut the pepper into fine slices
  • Remove the ends from the cucumber and cut in half lengthways
  • Place the 1/2 cucumber flat side down on the board and cut into thin pieces on the bias
  • Finally remove the core from the long cabbage and shred with a sharp knife
  • Once all the vegetables are cut reserve in the fridge till needed
  • Was the mint and the coriander and pat dry with paper
  • Pick the leaves from the stems and reserve in the fridge needed

To serve

  • Place equal quantities of the vegetables in a mixing bowl
  • Add to the bowl a pinch of the coriander and mint
  • Dress generously with the sour dressing
  • Add salt and pepper to taste
  • Serve in a small bowl
