SPAGHETTI CARBONARA

Ingredients

  • 40g bacon
  • 6g garlic
  • 20g onion
  • 30g olive oil
  • 40g white wine
  • 200g spaghetti (cooked)
  • 1 egg yolk
  • 30g cream
  • 50g Tomme de Napoleon
  • salt
  • pepper
  • 2g parsley

Instructions

  • Roughly slice the bacon and place in a saute pan with the olive oil
  • Cook over a medium heat till the bacon just begins to colour
  • Add to the pan the garlic and onion both finely chopped
  • Cook for a minute or two until softened but without colour
  • Add to the pan the white wine and reduce out
  • Whilst cooking place the spaghetti in salted boiling water
  • Drain off the spaghetti and add to the pan with the bacon and onions
  • Toss through and add a little of the water to the pan 
  • Add the egg yolk mixed with the cream
  • Add the grated cheese and mix through well
  • This will create a sauce with coating consistency
  • You can add a little more water if needed
  • Season to taste
  • Serve and sprinkle with some chopped parsley
