SOURDOUGH LOAVES (3 EACH 1 KILO LOAVES)

Ingredients

  • 1200g semolina 
  • 400g strong flour
  • 20g salt
  • 800g tap water
  • 60g olive oil
  • 1200g sourdough starter

Instructions

  • Place the semolina, strong flour and salt into a large machine mixing bowl
  • Add to the bowl the water and the olive oil
  • Add the starter to the mixing bowl and set to mix on the lowest speed
  • Once all the ingredients are combined turn the mixer to the medium setting
  • Mix for 6 minutes
  • After 6 minutes turn up to the highest speed and mix for 1 minute
  • Once the dough is made turn out onto a floured surface
  • Weigh out into 1.1 kilo pieces
  • Form the dough into the required shape and place in the floured bread basket
  • Leave to prove until doubled in size
  • Once risen turn out onto the dough table and transfer to the oven
  • Cook at 220c for 40 minutes with an initial 15 second steam 
  • Transfer to the rack to cool
