SOURDOUGH LOAVES (3 EACH 1 KILO LOAVES)

Ingredients
- 1200g semolina
- 400g strong flour
- 20g salt
- 800g tap water
- 60g olive oil
- 1200g sourdough starter
Instructions
- Place the semolina, strong flour and salt into a large machine mixing bowl
- Add to the bowl the water and the olive oil
- Add the starter to the mixing bowl and set to mix on the lowest speed
- Once all the ingredients are combined turn the mixer to the medium setting
- Mix for 6 minutes
- After 6 minutes turn up to the highest speed and mix for 1 minute
- Once the dough is made turn out onto a floured surface
- Weigh out into 1.1 kilo pieces
- Form the dough into the required shape and place in the floured bread basket
- Leave to prove until doubled in size
- Once risen turn out onto the dough table and transfer to the oven
- Cook at 220c for 40 minutes with an initial 15 second steam
- Transfer to the rack to cool
