SOLE FILLET WITH CAPERS

- 220g sole fillet
- 10g flour
- 40g butter
- 20g capers
- 10g lemon juice
- 10g olive oil
- 5g parsley
- 200g cooked new potatoes
- salt
- pepper
Instructions
- Place a sautee pan over a high heat with the olive oil
- When hot dust the sole with seasoned flour and lay in the pan
- Next to the sole place the sliced new potatoes so that they are all laying flat
- Move the pan to the oven
- Cook in the oven for 4 minutes
- Remove from the oven and turn over the sole and potatoes
- Add to the pan the capers and butter
- Return the pan to the oven and cook for a further 4 minutes
- Remove from the oven and finish with seasoning and chopped parsley
- Arrange on the plate and serve
