SOLE FILLET WITH CAPERS

Ingredients

  • 220g sole fillet
  • 10g flour
  • 40g butter
  • 20g capers
  • 10g lemon juice
  • 10g olive oil
  • 5g parsley
  • 200g cooked new potatoes
  • salt
  • pepper

Instructions

  • Place a sautee pan over a high heat with the olive oil
  • When hot dust the sole with seasoned flour and lay in the pan
  • Next to the sole place the sliced new potatoes so that they are all laying flat
  • Move the pan to the oven
  • Cook in the oven for 4 minutes
  • Remove from the oven and turn over the sole and potatoes
  • Add to the pan the capers and butter
  • Return the pan to the oven and cook for a further 4 minutes
  • Remove from the oven and finish with seasoning and chopped parsley
  • Arrange on the plate and serve
