SMOKED SALMON FRITATA

Ingredients

  • Smoked salmon 
  • Egg whites
  • Red bell peppers
  • Chives
  • Olive oil
  • Salt
  • Pepper
  • Tomato sauce (pasta sauce)
  • Mixed salad leaves

Instructions

  • Crack the egg whites into a small mixing bowl and whisk
  • De-seed the bell peppers and Saute in a little olive oil
  • Once cooked add to the egg white with a little salt and pepper
  • Mix well
  • Heat the Frittata pan over a medium gas and add to it a little oil
  • Pour in the egg whites mix and begin to cook over a medium heat
  • Once half cooked stir and place the Frittata pan in the oven
  • Cook till souffled and cooked through
  • Serve on an under liner plate with a side of tomato sauce
  • Add the tossed salad leaves and serve
