SMOKED SALMON FRITATA

Ingredients
- Smoked salmon
- Egg whites
- Red bell peppers
- Chives
- Olive oil
- Salt
- Pepper
- Tomato sauce (pasta sauce)
- Mixed salad leaves
Instructions
- Crack the egg whites into a small mixing bowl and whisk
- De-seed the bell peppers and Saute in a little olive oil
- Once cooked add to the egg white with a little salt and pepper
- Mix well
- Heat the Frittata pan over a medium gas and add to it a little oil
- Pour in the egg whites mix and begin to cook over a medium heat
- Once half cooked stir and place the Frittata pan in the oven
- Cook till souffled and cooked through
- Serve on an under liner plate with a side of tomato sauce
- Add the tossed salad leaves and serve
