SLAB FOCACCIA
Prep/Cooking Time: Longer Than 120 Minutes

- 3 Kilo Strong flour
- 2.5 Ltr Water
- 30g Yeast
- 50g Salt
- 120g Olive oil
Instructions
- Place the flour, water and yeast in a large mixing bowl
- Place on a mixer and turn onto the lowest setting
- Once all ingredients are combined turn up to medium speed and mix for 8 minutes
- After 8 minutes add the salt and oil
- Mix for a further 2 minutes
- Turn up to the highest setting and mix for 45 seconds
- Remove from the machine and transfer to an oiled container for proving
- Prove till doubled in size
- Once proved cut and weigh to required size
- Place in a well oiled tin and add topping or salt if necessary
- Leave till increased in size by 1/3 and place in the preheated oven at 220c
- Cook till golden and spongy to the touch
- Remove from the oven and cool at room temperature
