SESAME BURGER BUN

Prep/Cooking Time: Longer Than 120 Minutes

Ingredients

  • 1000g strong flour
  • 1000g plain flour
  • 1100g water
  • 100g vegetable oil
  • 30g salt
  • 30g yeast
  • 12g sugar
  • 2 eggs
  • 40g cream
  • 60g sesame seeds

Instructions

  • Place all the dry ingredients into a large machine mixing bowl
  • Add to the bowl the vegetable oil and water
  • Bring together on the lowest setting
  • Once all ingredients are combined set to medium speed
  • Mix on medium speed for 4 minutes
  • Set to high speed and mix for 1 minute
  • Whilst the dough is mixing make the egg wash
  • Separate the egg yolks and place them in a small bowl with the cream
  • Whisk together and strain into a spray bottle
  • Once the dough is ready remove from the mixer and turn out onto a floured surface 
  • Portion into 100g pieces
  • Roll into balls and place on a non stick mat, leaving enough room between for proving
  • Cover the balls leaving space for expansion
  • Once the balls have near trippled in size coat with egg wash
  • Top with the sesame seeds 
  • Place in a pre-heated convection oven at 180c
  • Cook for 20 minutes or until cooked through and golden brown
  • Leave to cool naturally
