SESAME BURGER BUN

Ingredients
- 1000g strong flour
- 1000g plain flour
- 1100g water
- 100g vegetable oil
- 30g salt
- 30g yeast
- 12g sugar
- 2 eggs
- 40g cream
- 60g sesame seeds
Instructions
- Place all the dry ingredients into a large machine mixing bowl
- Add to the bowl the vegetable oil and water
- Bring together on the lowest setting
- Once all ingredients are combined set to medium speed
- Mix on medium speed for 4 minutes
- Set to high speed and mix for 1 minute
- Whilst the dough is mixing make the egg wash
- Separate the egg yolks and place them in a small bowl with the cream
- Whisk together and strain into a spray bottle
- Once the dough is ready remove from the mixer and turn out onto a floured surface
- Portion into 100g pieces
- Roll into balls and place on a non stick mat, leaving enough room between for proving
- Cover the balls leaving space for expansion
- Once the balls have near trippled in size coat with egg wash
- Top with the sesame seeds
- Place in a pre-heated convection oven at 180c
- Cook for 20 minutes or until cooked through and golden brown
- Leave to cool naturally
