ROASTED FENNEL WITH ORANGE

Ingredients

  • 6 Heads of fennel
  • 1 Orange
  • 50ml Olive oil
  • Salt
  • Pepper
  • 30ml Orange Juice
  • 15g Sugar
  • 15ml Vinegar

Instructions

  • Remove the tops and outer leaves from the fennel
  • Cut the fennel into 1/8ths
  • Place the fennel on a baking sheet and add to it the olive oil
  • Cut the orange into 1/8ths and add to the fennel
  • Season the tray generously and add the sugar
  • Place the tray in the oven at 200c
  • Cook till the fennel begins to turn golden
  • Once the fennel is cooked remove from the heat
  • Add to the tray the orange juice and the vinegar
  • Cover the tray and leave to cool naturally
  • Check the seasoning and reserve in the fridge till needed
