ROASTED FENNEL WITH ORANGE

Ingredients
- 6 Heads of fennel
- 1 Orange
- 50ml Olive oil
- Salt
- Pepper
- 30ml Orange Juice
- 15g Sugar
- 15ml Vinegar
Instructions
- Remove the tops and outer leaves from the fennel
- Cut the fennel into 1/8ths
- Place the fennel on a baking sheet and add to it the olive oil
- Cut the orange into 1/8ths and add to the fennel
- Season the tray generously and add the sugar
- Place the tray in the oven at 200c
- Cook till the fennel begins to turn golden
- Once the fennel is cooked remove from the heat
- Add to the tray the orange juice and the vinegar
- Cover the tray and leave to cool naturally
- Check the seasoning and reserve in the fridge till needed
