ROASTED BROCCOLI

Ingredients


  • 3 heads broccoli
  • olive oil
  • salt

Instructions

  • trim the stems of the broccoli to remove the woody bit
  • remove any damaged florets or brown ends
  • turn the broccoli upside down with the stem upward
  • cut down through the stem and pull apart the florets
  • (this will leave less bits on the board)
  • once cut place on a baking sheet in a single layer
  • drizzle with the olive oil and season GENEROUSLY with salt
  • cook in a preheated oven at full temperature
  • cook until the florets begin to char
  • remove from the heat and leave to cool to room temp
  • once cool move to a serving dish and reserve till needed
