ROASTED BROCCOLI

15-30 Minutes

Ingredients
- 3 heads broccoli
- olive oil
- salt
Instructions
- trim the stems of the broccoli to remove the woody bit
- remove any damaged florets or brown ends
- turn the broccoli upside down with the stem upward
- cut down through the stem and pull apart the florets
- (this will leave less bits on the board)
- once cut place on a baking sheet in a single layer
- drizzle with the olive oil and season GENEROUSLY with salt
- cook in a preheated oven at full temperature
- cook until the florets begin to char
- remove from the heat and leave to cool to room temp
- once cool move to a serving dish and reserve till needed
