RICOTTA RAVIOLI WITH SWEET BELL PEPPERS

Ingredients

  • 800g ricotta ravioli
  • 200g red bell peppers
  • 200g yellow bell peppers
  • 20ml olive oil
  • Salt
  • Pepper
  • 60ml white wine
  • 60g butter
  • 40g parmesan
  • 4g basil
  • 60g goat cheese

Instructions

  • Wash and de seed the bell peppers
  • Remove all seeds and pat dry
  • Place the olive oil i a thick bottomed pan and place over a medium heat
  • Add to the pan the bell peppers finely sliced
  • Cook the peppers till just starting to color
  • Add the wine to the pan and mix through
  • Simmer the peppers till the wine have mostly evaporated
  • Remove from the heat and season with salt and pepper
  • Leave to cool till needed
  • To serve place the butter and peppers in a pan
  • Drop the ravioli into salted boiling water and cook for 5 minutes (more or less depending on pasta)
  • Once the butter is melted and the peppers are hot add the parmesan and mix through
  • If the mix is fairly dry add a little of the pasta water
  • You want a nice creamy texture
  • Once the pasta is cooked drain and add to the peppers
  • Mix through and season to taste
  • Add torn fresh basil 
  • Crumble the fresh goat cheese over the top and serve
