RICE AND PEAS

Ingredients

  • 20g oil
  • 600g rice
  • 800g water
  • 200g beans
  • 1/2 cup jerk seasoning
  • 1 tbsp kitchen bouquet
  • 1 tbsp tomato paste
  • 1 can coconut milk (400g)
  • 1/2 tbsp complete seasoning
  • salt
  • pepper

Instructions

  • Place the oil in a thick bottom pan
  • Heat over a medium flame
  • Add to the pan the jerk seasoning and cook to release the flavours
  • Add the tomato paste, kitchen bouquet and stir through
  • Add to the pan the coconut milk
  • Add to the pan the rice & beans, stir through
  • Add the water and bring to the simmer
  • Turn down the heat to low
  • Cook over a low heat till all the liquid has been absorbed or has evaporated
  • Remove from the heat and keep warm till needed
