RICE AND PEAS

Ingredients
- 20g oil
- 600g rice
- 800g water
- 200g beans
- 1/2 cup jerk seasoning
- 1 tbsp kitchen bouquet
- 1 tbsp tomato paste
- 1 can coconut milk (400g)
- 1/2 tbsp complete seasoning
- salt
- pepper
Instructions
- Place the oil in a thick bottom pan
- Heat over a medium flame
- Add to the pan the jerk seasoning and cook to release the flavours
- Add the tomato paste, kitchen bouquet and stir through
- Add to the pan the coconut milk
- Add to the pan the rice & beans, stir through
- Add the water and bring to the simmer
- Turn down the heat to low
- Cook over a low heat till all the liquid has been absorbed or has evaporated
- Remove from the heat and keep warm till needed
