RED COLESLAW

  Ingredients

  • Carrot
  • Red onion
  • Red cabbage
  • Mayonnaise
  • Red wine vinegar
  • Olive oil
  • Salt
  • Black pepper

Instructions

  • Remove the outer leaves from the cabbage 
  • Peel the onion and carrots
  • Shred the cabbage as finely as possible and place in a mixing bowl
  • Finely slice the onion and add to the cabbage
  • Now grate the carrots on the bias trying to keep the shreds as long as possible
  • Add the carrots to the bowl and sprinkle with salt, mix thoroughly
  • Transfer the vegetables into a sieve and leave to salt for an hour
  • After 1 hour squeeze off any excess liquid and return the vegetables to the mixing bowl
  • Add to the bowl the olive oil, vinegar and mayonnaise
  • Mix well and add seasoning to taste
  • Once well mixed and seasoned cover with plastic and reserve till needed
