QUINOA, KALE & APPLE

Ingredients

  • 120g quinoa (cooked)
  • 60g apple
  • 40g kale
  • 1/2 avocado
  • 60g cucumber
  • 20g olive oil
  • 10g lemon juice
  • 2g parsley

Instructions

  • Place the quinoa in a small mixing bowl
  • Wash the apple and kale and pat dry
  • Remove the core from the apple and slice thinly
  • Shred the kale and add both the apple and kale to the bowl
  • Remove the stone from the avocado and roughly chop
  • Peel the cucumber and cut into bite size lengths
  • Add both the cucumber and avocado to the bowl
  • Drizzle with the olive oil and lemon juice
  • Toss and season to taste
  • Finish with the chopped parsley and serve
