QUINOA, KALE & APPLE

Ingredients
- 120g quinoa (cooked)
- 60g apple
- 40g kale
- 1/2 avocado
- 60g cucumber
- 20g olive oil
- 10g lemon juice
- 2g parsley
Instructions
- Place the quinoa in a small mixing bowl
- Wash the apple and kale and pat dry
- Remove the core from the apple and slice thinly
- Shred the kale and add both the apple and kale to the bowl
- Remove the stone from the avocado and roughly chop
- Peel the cucumber and cut into bite size lengths
- Add both the cucumber and avocado to the bowl
- Drizzle with the olive oil and lemon juice
- Toss and season to taste
- Finish with the chopped parsley and serve
