Ingredients

  • 150g cooked quinoa
  • 40g carrot
  • 60g cucumber
  • 40g radish
  • 40g green beans
  • 40g red bell peppers
  • 30g green onions
  • 15g lemon juice
  • 20g olive oil
  • salt
  • pepper

Instructions

  • Place the cooked quinoa in a mixing bowl
  • Peel the carrot and cucumber and cut into thin slices
  • Core and de-seed the bell pepper and cut into thin slices
  • Trim the beans and green onions and cut into bite size pieces
  • Add all the cut vegetables to the quinoa bowl
  • Add the lemon juice and olive oil
  • Season to taste
