QUINOA & RAW VEGETABLE SALAD

- 150g cooked quinoa
- 40g carrot
- 60g cucumber
- 40g radish
- 40g green beans
- 40g red bell peppers
- 30g green onions
- 15g lemon juice
- 20g olive oil
- salt
- pepper
Instructions
- Place the cooked quinoa in a mixing bowl
- Peel the carrot and cucumber and cut into thin slices
- Core and de-seed the bell pepper and cut into thin slices
- Trim the beans and green onions and cut into bite size pieces
- Add all the cut vegetables to the quinoa bowl
- Add the lemon juice and olive oil
- Season to taste
