QUINOA & GOLDEN CORN SALAD

Ingredients

  • 150g Quinoa
  • Salt
  • 40g Red bell peppers
  • 20g Yellow bell peppers
  • 40g Sweet corn (canned)
  • 20g Red onion
  • 40g Cucumber
  • 10g Coriander
  • 7g Red wine vinegar
  • 4g Honey
  • 7g Olive oil
  • Pepper

Instructions

  • Cook the quinoa in salted boiling water until tender to the bite
  • Drain the quinoa and lay on a tray to cool
  • (if you cool under water it will retain water and dilute the dressing)
  • Peel and de-seed the peppers and peel the onions and cucumber
  • Slice the peppers and cucumber into bite size pieces and place in a mixing bowl
  • Finely slice the onion and add to the bowl
  • Strain the corn and leave to dry
  • Once the corn is dry add to the bowl along with the coriander
  • Pour the honey, vinegar and olive oil into a small bowl
  • Whisk to combine
  • Once the dressing is made you can keep in a squeeze bottle 
  • Add the quinoa to the vegetable bowl and drizzle with a generous amount of dressing
  • Season with salt and pepper to taste
  • Serve immediately
