QUINOA & GOLDEN CORN SALAD

Ingredients
- 150g Quinoa
- Salt
- 40g Red bell peppers
- 20g Yellow bell peppers
- 40g Sweet corn (canned)
- 20g Red onion
- 40g Cucumber
- 10g Coriander
- 7g Red wine vinegar
- 4g Honey
- 7g Olive oil
- Pepper
Instructions
- Cook the quinoa in salted boiling water until tender to the bite
- Drain the quinoa and lay on a tray to cool
- (if you cool under water it will retain water and dilute the dressing)
- Peel and de-seed the peppers and peel the onions and cucumber
- Slice the peppers and cucumber into bite size pieces and place in a mixing bowl
- Finely slice the onion and add to the bowl
- Strain the corn and leave to dry
- Once the corn is dry add to the bowl along with the coriander
- Pour the honey, vinegar and olive oil into a small bowl
- Whisk to combine
- Once the dressing is made you can keep in a squeeze bottle
- Add the quinoa to the vegetable bowl and drizzle with a generous amount of dressing
- Season with salt and pepper to taste
- Serve immediately
