POTATO SALAD JALEPENO

Ingredients

  • 800g potatoes
  • 60g red onions
  • 60g gherkins
  • 60g jalepeno
  • salt to taste
  • 3 tbsp white vinegar
  • 100g mayonnaise
  • black pepper to taste
Instructions

  • boil potatoes and heavily salted water
  • cook until tender
  • remove from the water and leave to cool to room temperature
  • once cooled remove the skin
  • if using new potatoes you can leave the skin on
  • once cool roughly dice
  • drain the gherkins and jalepenos
  • roughly chop the gherkins and jalepenos
  • peel and finely dice the red onions
  • place all the chopped items in a bowl
  • add to the bowl the mayonnaise and vinegar
  • mix till well combined
  • add the potatoes and stir through
  • mill lots of black pepper and season with salt to taste
  • place in a serving bowl and reserve at room temperature till needed
