POTATO SALAD JALEPENO
Prep/Cooking Time:
30-45 Minutes

Ingredients
- 800g potatoes
- 60g red onions
- 60g gherkins
- 60g jalepeno
- salt to taste
- 3 tbsp white vinegar
- 100g mayonnaise
- black pepper to taste
Instructions
- boil potatoes and heavily salted water
- cook until tender
- remove from the water and leave to cool to room temperature
- once cooled remove the skin
- if using new potatoes you can leave the skin on
- once cool roughly dice
- drain the gherkins and jalepenos
- roughly chop the gherkins and jalepenos
- peel and finely dice the red onions
- place all the chopped items in a bowl
- add to the bowl the mayonnaise and vinegar
- mix till well combined
- add the potatoes and stir through
- mill lots of black pepper and season with salt to taste
- place in a serving bowl and reserve at room temperature till needed
