PORK CHOP WITH BEET ROOT SALAD

- 200g Pork chop
- 150g New potatoes
- 70g Beet root
- 20g Capers
- 30g Red onion
- 20g Olive oil
- 1g Salt
- .25g Pepper
Instructions
- Cook the pork chop in a fry pan with a little olive oil
- Once cooked leave on the side to rest
- Cook the new potatoes in salted boiling water till tender
- Peel the cooked beet root and remove the stem
- Once the potatoes are cooked cut them into wedges and place in a bowl
- Add to the bowl the beet root cut to a similar size
- Add the red onion finely sliced and the capers
- When the dish is away heat the olive oil in a fry pan till it smokes
- Add the contents of the bowl to the pan
- Fry till all is hot through
- Season to taste
- Serve
