PORK CHOP WITH BEET ROOT SALAD

Ingredients

  • 200g Pork chop
  • 150g New potatoes
  • 70g Beet root
  • 20g Capers
  • 30g Red onion
  • 20g Olive oil
  • 1g Salt
  • .25g Pepper

Instructions

  • Cook the pork chop in a fry pan with a little olive oil
  • Once cooked leave on the side to rest
  • Cook the new potatoes in salted boiling water till tender
  • Peel the cooked beet root and remove the stem
  • Once the potatoes are cooked cut them into wedges and place in a bowl
  • Add to the bowl the beet root cut to a similar size
  • Add the red onion finely sliced and the capers
  • When the dish is away heat the olive oil in a fry pan till it smokes
  • Add the contents of the bowl to the pan 
  • Fry till all is hot through
  • Season to taste
  • Serve
