Ingredients

  • 1 whole pineapple (riper the better)
  • 100g sugar
  • 2 limes
  • Pinch of chili flakes
  • Pinch of salt
  • 200g Sour cream
  • 4 drops Vanilla extract
  • 50g Sugar

Instructions

  • Peel the pineapple and slice into 1/2" pieces, place in a bowl
  • Measure out the sugar and chili flakes, zest the limes into it 
  • Add the lime sugar to the pineapple and mix through
  • Leave to marinate for 2 hours
  • Preheat the chargrill
  • Brush the bars and coat with oil
  • Place the pineapple slices on the chargrill and cook on both sides till slightly charred
  • Once cooked place back in the bowl with the original juices
  • Keep at room temperature till needed
  • Place the sour cream in a small mixing bowl and add to it the sugar and vanilla extract
  • Mix well and reserve in the fridge till needed
  • To serve arrange the charred pineapple on a plate and serve with the vanilla cream on the side
