PINA ASADA

Ingredients
- 1 whole pineapple (riper the better)
- 100g sugar
- 2 limes
- Pinch of chili flakes
- Pinch of salt
- 200g Sour cream
- 4 drops Vanilla extract
- 50g Sugar
Instructions
- Peel the pineapple and slice into 1/2" pieces, place in a bowl
- Measure out the sugar and chili flakes, zest the limes into it
- Add the lime sugar to the pineapple and mix through
- Leave to marinate for 2 hours
- Preheat the chargrill
- Brush the bars and coat with oil
- Place the pineapple slices on the chargrill and cook on both sides till slightly charred
- Once cooked place back in the bowl with the original juices
- Keep at room temperature till needed
- Place the sour cream in a small mixing bowl and add to it the sugar and vanilla extract
- Mix well and reserve in the fridge till needed
- To serve arrange the charred pineapple on a plate and serve with the vanilla cream on the side
