PENNE SMOKED SALMON

Ingredients

  • Penne pasta
  • Smoked salmon
  • Shallot
  • Garlic
  • Thyme
  • White wine
  • Cream
  • Tarragon
  • Olive oil

Instructions

  • Place the penne in a pan of fast boiling salted water and cook for the directed time
  • In a sauce pan heat a little olive oil over a low gas
  • Add to the pan the shallot and garlic
  • Saute with no color till softened
  • Add to the pan the thyme and white wine
  • Cook till the wine is reduced then add to the pan the cream
  • Bring to the boil then add the smoked salmon
  • Once the pasta is cooked remove from the water and drain
  • Add the chopped tarragon to the sauce
  • Add the penne to the pan and toss through
  • Season to taste and serve
