PENNE SMOKED SALMON

Ingredients
- Penne pasta
- Smoked salmon
- Shallot
- Garlic
- Thyme
- White wine
- Cream
- Tarragon
- Olive oil
Instructions
- Place the penne in a pan of fast boiling salted water and cook for the directed time
- In a sauce pan heat a little olive oil over a low gas
- Add to the pan the shallot and garlic
- Saute with no color till softened
- Add to the pan the thyme and white wine
- Cook till the wine is reduced then add to the pan the cream
- Bring to the boil then add the smoked salmon
- Once the pasta is cooked remove from the water and drain
- Add the chopped tarragon to the sauce
- Add the penne to the pan and toss through
- Season to taste and serve
