PENNE SAUSAGE TOMATO

Ingredients

  • 200g cooked Penne pasta
  • 1 Piece Sausage
  • 40g Red onion
  • 10g Garlic
  • 10g Chili
  • 15g Olive oil
  • Salt
  • Pepper
  • 60g Chopped canned tomatoes
  • 5g Oregano
  • 20g Parmesan

Instructions

  • Peel the red onion and garlic and remove any stem or root
  • Finely slice the onions and garlic and place in a saucepan with the olive oil
  • Cook over a high heat till the onion begins to color and soften
  • Add the sausage cut into 1" pieces to the pan and cook for 2 minutes
  • Add the chili roughly chopped along with the tomatoes
  • Once the sauce boils reduce the heat and simmer for 10-15 minutes or until the sausage is cooked through 
  • Season the sauce with salt and pepper to taste and reserve till needed
  • To serve cook the pasta in salted boiling water,
  • Cook to the bite 
  • Whilst the pasta is cooking heat the sauce and add the fresh oregano leaves 
  • Once the pasta is cooked drain for a minute before adding to the sauce
  • Mix well 
  • Top with shredded parmesan and serve
