PANZANELLA DRESSING

Ingredients

  • 175g Bell pepper
  • 200g Tomatoes
  • 175g Cucumber
  • 175g Red onions
  • 250g Olive oil
  • 175g Red wine vinegar

Instructions

  • Wash and de-seed all the ingredients
  • Roughly chop the vegetables and place in a blender jug
  • Add to the jug the olive oil and vinegar
  • Blend to achieve consistency
  • Season to taste
  • Reserve in the fridge till needed
