PANZANELLA DRESSING

Ingredients
- 175g Bell pepper
- 200g Tomatoes
- 175g Cucumber
- 175g Red onions
- 250g Olive oil
- 175g Red wine vinegar
Instructions
- Wash and de-seed all the ingredients
- Roughly chop the vegetables and place in a blender jug
- Add to the jug the olive oil and vinegar
- Blend to achieve consistency
- Season to taste
- Reserve in the fridge till needed
