MOCHA PANNA COTTA

Makes 6
- 150g Espresso
- 600ml Heavy cream
- 400ml Milk
- 90g Sugar
- 6 leaves Gelatin
Instructions
- Lay the gelatin leaves in cold water to soften
- Place the cream, milk, sugar and espresso in a saucepan
- Bring to the boil over a medium heat
- Once boiled remove from the heat and leave to sit for 1 minute
- After 1 minute place the soft gelatin leaves in the cream mix
- Strain the cream mixture into a clean container
- Leave the cream mixture to cool till luke warm
- At this point pour the mix into the molds
- Cover with cling film and place the molds in the fridge to set
- Reserve in the fridge till needed
