MOCHA PANNA COTTA

Ingredients

Makes 6

  • 150g Espresso
  • 600ml Heavy cream
  • 400ml Milk
  • 90g Sugar
  • 6 leaves Gelatin

Instructions

  • Lay the gelatin leaves in cold water to soften
  • Place the cream, milk, sugar and espresso in a saucepan
  • Bring to the boil over a medium heat
  • Once boiled remove from the heat and leave to sit for 1 minute 
  • After 1 minute place the soft gelatin leaves in the cream mix
  • Strain the cream mixture into a clean container
  • Leave the cream mixture to cool till luke warm
  • At this point pour the mix into the molds
  • Cover with cling film and place the molds in the fridge to set
  • Reserve in the fridge till needed
