MIXED BERRY COBBLE

Prep/Cooking Time: 45-60 Minutes

Ingredients

  • 110g Frozen mixed berries
  • 250g Flour
  • 60g Sugar
  • 120g Butter (cold)
  • 50g Porridge oats
  • 50g Cream
  • 15g Powdered sugar

Instructions

  • Thaw the berries overnight in the fridge
  • Place the flour, sugar and oats in a large mixing bowl and mix through
  • Remove the butter from the fridge and cut into small pieces
  • Add to the bowl and work together using your hands or a robo coupe
  • Once the butter is combined with the flour it should resemble crumb
  • Place half the crumb mix in the bottom of a deep baking pan and gently press down
  • Now add a layer of the berries
  • Then add the remaining crumb to the top of the tray and spread out evenly
  • Bake in a pre-heated oven at 180c for 30-45 minutes 
  • Or until golden on top and cooked through
  • Once cooked remove from the oven and leave to cool naturally
  • Once cold can be portioned and stored in the fridge till needed

 

  • To serve bring out from the fridge so can be served at room temperature
  • Serve with sweet whipped cream and a fresh mint leaf
