MIXED BERRY COBBLE

45-60 Minutes
Ingredients
- 110g Frozen mixed berries
- 250g Flour
- 60g Sugar
- 120g Butter (cold)
- 50g Porridge oats
- 50g Cream
- 15g Powdered sugar
Instructions
- Thaw the berries overnight in the fridge
- Place the flour, sugar and oats in a large mixing bowl and mix through
- Remove the butter from the fridge and cut into small pieces
- Add to the bowl and work together using your hands or a robo coupe
- Once the butter is combined with the flour it should resemble crumb
- Place half the crumb mix in the bottom of a deep baking pan and gently press down
- Now add a layer of the berries
- Then add the remaining crumb to the top of the tray and spread out evenly
- Bake in a pre-heated oven at 180c for 30-45 minutes
- Or until golden on top and cooked through
- Once cooked remove from the oven and leave to cool naturally
- Once cold can be portioned and stored in the fridge till needed
- To serve bring out from the fridge so can be served at room temperature
- Serve with sweet whipped cream and a fresh mint leaf
