MASH POTATO CREAM

Ingredients

  • 300g Onion
  • 400g Fennel
  • 200g Butter
  • 1ltr Heavy cream

Instructions

  • Peel and finely dice the onion
  • Clean and finely dice the fennel
  • Melt the butter in a pan and add to it the fennel and onion
  • Cook in the butter till softened
  • Add to the pan the cream and bring to the boil
  • Simmer until the fennel and onion are cooked through
  • Remove from the heat and blend
  • Keep warm if needed
  • Or cool and store in the fridge till later
