MASH POTATO CREAM
Prep/Cooking Time: 15-30 Minutes

- 300g Onion
- 400g Fennel
- 200g Butter
- 1ltr Heavy cream
Instructions
- Peel and finely dice the onion
- Clean and finely dice the fennel
- Melt the butter in a pan and add to it the fennel and onion
- Cook in the butter till softened
- Add to the pan the cream and bring to the boil
- Simmer until the fennel and onion are cooked through
- Remove from the heat and blend
- Keep warm if needed
- Or cool and store in the fridge till later
